One thing I enjoyed most about eating bell peppers growing up was their sweet taste, varied colors, and the crunch they make when you chew. When people think of Bell Peppers, often times I can imagine the first thing that comes to mind are bell peppers on pizza or chopped up in Chinese food. Ordinarily my mother would chop up a set and cook them either in a stew with chicken and rice or as a side with ranch and celery. Some of the health benefits of bell peppers might actually surprise you. Cook time varies, if you want your bell peppers to be more crisp when you bite into them cook them between (1 hour 15 minutes-1 hour 20 minutes)Step 1) Cut the tops off your bell peppers, wash and soak peas over night. Then drain and pressure the peas. Add rice to your rice cooker and wait until it beeps.
Step 2) Bring your stove to Med-High heat, apply 1 Tbsp. of coconut oil to your pan and braise the onion until tender,add peas into the pan and season as to taste (Lawry's seasoning salt, Mrs. Dash, Turmeric etc.)
Step 3) Repeat 1st quarter of Step 2. braise the 2nd half the onion and throw in your ground turkey. As the turkey browns add you're seasonings (Lawry's lemon pepper seasoning salt, regular Lawry's, Mrs. Dash Etc.)
Step 4)Bring Set the oven to 350 degrees. Once it is set stuff your peppers with rice, chick peas greens, turkey and with 1-2 sections of cheese

As a child of the 90s, Halloween has always been one of my favorite holidays! In adult hood, Halloween still is my favorite holiday! Carving Jack O lanterns in the fall with my dad was always a fun experience before going trick or treating with friends. Either way, one thing you cannot do with Jack O Lanterns after your done with them is eat them. When it comes to bell peppers, that's a totally different story. You can carve all kinds of faces into your bell peppers, pair them with the "picky eater special" (breakfast of champs post)and you have a recipe for success. Feel free to treat yourself, family, friends or your significant other to a culinary delight with this holiday brunch
