Breakfast of Champions For The Pickiest Among US

Before we segue into our next topic for today, I thought now would be the best time to take a moment to give thanks to everyone who was involved in making this experience better & more fluid. The creative ideas, positive feed back and solutions for change over the past few days were greatly appreciated. Our next topic of discussion is centered around picky eaters across the board, who can either be our most ardent supporters or our harshest critics in the kitchen. Since everyone loves brunch in DC, this breakfast of champions smoothie combo works wonders for those who want to ball on a budget and flex their culinary arts skills all at the same time.

Oat Pancakes, Crispy Bacon, and Green Eggs w/Cheese 😎


 Flash back to Winter 2017

One dreary day in December, my niece asked me to read her the Dr.Seuss classic "Green Eggs & Ham", (which is pretty ironic b/c like Sam I am, my niece is also a picky eater). Seeing how much she enjoyed the story, I promised her that we would celebrate by eating green eggs and ham together just like Sam I am.. One year later and she still hasn't taken me on 😅.  All jokes aside this recipe is nothing complicated all you need is: 2-3 Eggs+ 3 Slices of Cheddar Cheese+ a handful Baby Spinach + 1 Tomato + Organic Mango Salsa and 1-2 Strips of Bacon.  Next you will need a cutting board, a sharp knife for chopping, a medium sized pan and some butter.

Once you have gathered all of the materials mentioned above, set your stove top to a low heat (2-3). Next you can either cut a sliver of butter and throw it in the pan or you can start chopping up your tomato, spinach and cheese.  (I encourage everyone to freestyle) crack your eggs in the pan and crank up the heat to about 5-6.  While your eggs begin to gel start scrambling them and add your cheese along with you're preferred seasonings (I usually sprinkle a generous amount of black pepper, oregano and a little Mrs. Dash.)

Once your cheese starts to melt, this is the time to toss your chopped spinach into the pan along with your tomatoes. While everything begins to gel again, feel free to top it off with 1-2 tea spoons of mango salsa. Turn the stove top to low and let everything simmer for about two or three minutes. Turn off your stove, cover you're eggs, and move on to the pancakes.  

Oat Pancakes (Minus The Eggs)

Believe it or not you can make pancakes with or with out eggs and the best part about these pancakes is that they are great for your heart! The recipe is even easier than the eggs: 2 Cups of Rolled Oats, 2 cups of Almond Milk (Cashew is great as well), 2 tbsps. of Honey ( Agave , or both [1:1 Ratio]and 1 tsp. of Baking Powder . Add all ingredients to the bullet and let it run for about 30 seconds. Once the bullet is finished, pour  the contents into either a non stick pan or griddle (medium high heat or 350 degrees on the griddle).

Let the pancakes sit for 30 seconds before flipping to the other side.  Once both sides are completely brown transfer all the pancakes to a large plate and add your favorite fruit, jam, or syrup(maple).  Congratulation's, you're now two for three in the breakfast of champions!!  
Picky Eater Smoothie Special

The final stage of the breakfast of champions journey,is "The Picky Eater Smoothie Blast", this recipe comes straight from the Nutriliving cite(https://www.nutriliving.com/recipes/the-picky-eater-smoothie) and is one of my go to smoothies post work out or if supplies are limited in the fridge. This smoothie has worked well for me in the past with picky eaters of all ages and the ingredients list is also pretty straight forward: 2 Cups or handfuls of Baby Spinach + 1 cup of Frozen Mango's + 1 Sliced Banana + 2 Cups of Almond Milk ([*Pea Protein is Optional & recommended for adults only) = One Bomb Smoothie!! 
Full disclosure, this is a green smoothie,(picture green slime from Nickelodeon back in the 90s) so the first thing that may turn a picky eater off is the sight of this greenish looking ooze swirling around in your blender/bullet, or glass. You may be thinking to yourself "So and so might find the taste/texture  to be weird .. why bother?", but no worries, like that old saying goes "looks can be deceiving" .
Step 1) Gather All Materials

Just from experience I recommend that the spinach goes in the bullet first followed by the bananas, mango's and almond milk there after. Attach your blades and then proceed to be amazed!
 Step 3: Fill Your Glasses

Although this is self explanatory here's a few tips. If you plan on making this for more than 3 people double up the recipe because people will becoming back for more. 






Step 4: Kick Back and Enjoy
The greatest part of this smoothie is that you do not have to be a picky eater to enjoy this.  The health benefits for this smoothie are off the charts and its simple to make. Pair this with a breakfast burrito or pancakes/eggs and you truly have what I like to call a breakfast of champions.

  1. Really would love to try the oat pancakes and the green smoothie. I'm a huge advocate of green smoothies and always looking for new recipes. And the pancakes look easy to do with things I already own.

    1. Go for it! The best part of these two recipes is that they taste amazing and they are the furthest thing from time consuming. The green smoothie is a great option if you are constantly on the go or if you need something quick for a post work out meal. What are some of you're preferences as it relates to green smoothies?
